Life’s Bittersweet Moments

I’ve moved a lot in my 30-something years on this planet – about 18 times so far. Each time it breaks my heart a little. Some places have been disastrous, some with their fair share of annoying neighbors, others lovely and peaceful…but no matter the situation each one has been “home” for the length of time I’ve lived there.

Fōnuts: Vegan & Gluten-Free Deliciousness

I’ve never been a huge donut fan. Every year or so I would get a craving for one of those fried rings of dough covered in milk chocolate and upon consuming, without fail, I would feel disgusting. Stomach ache, heavy, gross. It seems a year was about how long it would take me to forget the aftermath of that brief indulgence. Needless to say, I was not a donut junkie.

Grilled Pineapple Kale Salad

Some nights are just too hot to fire up the oven and eat an entirely cooked meal. We’ve had a few of those in Los Angeles the past couple weeks and this particular evening I wanted to put together a salad for dinner that would be bursting with flavor and leave me satisfied. The combination of hearty kale, crunchy cashews and the sweetness of the pineapple was a perfect blend that danced on my tastebuds.

Ringling Bros Circus: Barbaric and Unnecessary

The conditions and treatment of circus animals is disgusting. The fact that so many people still flock to these shows, hopefully unaware, saddens me. That is why I decided to join the protest of the Ringling Bros circus in downtown L.A. this week; Bringing awareness to the masses in hopes that they think twice next time the circus comes to town.

Mexican Stuffed Peppers

Recently my husband has been into cooking (hallelujah!). I guess all I had to do was go away for a week and let him fend for himself to spark the inspiration! The other night he even went grocery shopping on his way home from work and we came up with these spicy Mexican stuffed peppers. They came out pretty awesome.
