Pizza Night! Sausage & Mushroom

After the hugely successful BBQ Chicken Pizza experiment a few weeks ago, Jason and I have declared Wednesday nights Pizza Night! in our household. Each week we arm ourselves with Trader Joe’s pizza dough (which may be my most favorite TJ’s product ever) and toppings of our choice. We have graduated from one big pizza to personal pan pizza’s so we can each make our own creation which has made for harmonious Wednesdays for sure.

Vegan Santa Fe Chicken Sandwich

I’ve been feeling pretty food nostalgic lately and in keeping with the trend of making food I loved growing up I wanted to put together a healthier vegan version of a fast food sandwich I couldn’t get enough of as a kid. Of course, one of my first jobs as a teenager was working at this particular fast food joint and vegan or not, I would NEVER eat there again *shudders*…I won’t go into those gruesome details though. Let’s focus on the positive here: a better version of a Santa Fe Chicken sandwich.

Southern Fried Tofu

My mama is from Texas. If you listen closely you can still hear the twang when she says things like “oven” and “lawyer”. We like to tease her about it. Her mother, my grandma, was a round, squishy woman with a bad ass attitude who smelled of cigarette smoke and Juicy Fruit gum, but man she could cook up a storm. Growing up I remember her making huge meals filled with butter, lard and fried…everything.
