Wild Mushroom Jambalaya

I’ve only been to Louisiana once, and it was for half a day as I was road tripping back home to California from Tennessee. It only took moments for me to fall in love with New Orleans though. The second I drove into the French Quarter I was awed by the beauty and the obvious history and culture contained within it. There was only time for one meal, and I was sad I didn’t have time to hunt down vegan Jambalaya, so the thought of it has been lingering in the back of my mind for a couple years now.

Cookbook Corner: Viva Vegan

Some of my all time favorite foods come from the Mexican/Latin variety. I love the flavor combinations used in Latin cooking and I’m always down for spicy food, so it’s no wonder one of the very first vegan cookbooks I purchased was Viva Vegan! by Terry Hope Romero. Cookbook Corner: The Vegan Zombie: Cook & Survive

Over the past few years I have collected quite a bit of vegan cookbooks. I love getting a new cookbook and spending a couple hours going through them, looking at the pictures, reading the recipes and marking the ones I really want to make. After that process they usually go on the shelf and sit there untouched. It’s a horrible habit I have and I am determined to break it with this new series I’m calling Cookbook Corner. Each week I will make a recipe from one of the cookbooks I own and share it with you here!

St. Paddy’s Day Shake

Blackberry Ginger Cocktail

It’s been awhile since I’ve posted a cocktail recipe. I’ve been visiting my best friend and her adorable family this past week and it was the perfect opportunity to whip up a refreshing adult beverage to share with some of the best people I know! There was no premeditated thought that went into this drink, we simply used what she had on hand in her kitchen and the results were fantastic!

Review: Neat Foods Mexican Mix – Street Tacos

Vegans and vegetarians have it made nowadays being that there is no shortage of meat alternatives. The most recent I’ve tried is Neat. I was sent samples of their three varieties: Original, Italian and Mexican. What’s great about Neat is it’s soy free and gluten free, made only with nuts, whole grain oats and spices! Perfect for those who want an alternative to soy-laden, overly processed products!

Indian “Butter” Tofu

Oh man, I do love Indian food and one of my all time favorite dishes from my non-vegan past was Butter Chicken. That creamy, spicy sauce was all I could think about some days…it really had nothing to do with the chicken itself.
