Cookbook Corner: The Vegan Zombie: Cook & Survive

Over the past few years I have collected quite a bit of vegan cookbooks. I love getting a new cookbook and spending a couple hours going through them, looking at the pictures, reading the recipes and marking the ones I really want to make. After that process they usually go on the shelf and sit there untouched. It’s a horrible habit I have and I am determined to break it with this new series I’m calling Cookbook Corner. Each week I will make a recipe from one of the cookbooks I own and share it with you here!

St. Paddy’s Day Shake

Blackberry Ginger Cocktail

It’s been awhile since I’ve posted a cocktail recipe. I’ve been visiting my best friend and her adorable family this past week and it was the perfect opportunity to whip up a refreshing adult beverage to share with some of the best people I know! There was no premeditated thought that went into this drink, we simply used what she had on hand in her kitchen and the results were fantastic!

Review: Neat Foods Mexican Mix – Street Tacos

Vegans and vegetarians have it made nowadays being that there is no shortage of meat alternatives. The most recent I’ve tried is Neat. I was sent samples of their three varieties: Original, Italian and Mexican. What’s great about Neat is it’s soy free and gluten free, made only with nuts, whole grain oats and spices! Perfect for those who want an alternative to soy-laden, overly processed products!

Indian “Butter” Tofu

Oh man, I do love Indian food and one of my all time favorite dishes from my non-vegan past was Butter Chicken. That creamy, spicy sauce was all I could think about some days…it really had nothing to do with the chicken itself. Potato Kale Leek Soup

The last time I made soup, I had to do an intricate blender dance in order to get everything mixed together nicely. Pour half the hot soup into the blender, blend, pour into another bowl, pour the rest of the mix into the blender, blend, pour back into pot along with the first batch and then continue to cook. It felt like one of those mind puzzles from an I.Q. test and I realized then that I could definitely make good use of an immersion blender. Luckily, I got one for Christmas and I knew right away I wanted to attempt another soup.

Garlic Rosemary Apple Crostini

I’m going to give it to you straight, garlic and rosemary is one of my all time favorite savory combinations. The smell of each of them alone is the stuff dreams are made of, but put them together and wooo-doggy that’s some good stuff right there. So when I thought about making a warm apple crostini, it was only natural that those two were involved. And thus was born the fifth and final dish in the Week of Appetizers: Garlic Rosemary Apple Crostini.

Breaded & Baked Artichoke Hearts

Full disclosure: I LOVE fried foods. Yes, I try to eat healthy as much as possible, but every once in awhile I need something fried. It’s the ultimate guilty pleasure. I know it’s not good for me, but it’s ok to be naughty every once in awhile, right? Moderation and all that jazz. Ever since munching on the fried artichokes at Golden Road, I’ve been craving them, but thought the Week of Appetizers would be the perfect opportunity to try my hands at a healthier version.
