Potato Kale Leek Soup

The last time I made soup, I had to do an intricate blender dance in order to get everything mixed together nicely. Pour half the hot soup into the blender, blend, pour into another bowl, pour the rest of the mix into the blender, blend, pour back into pot along with the first batch and then continue to cook. It felt like one of those mind puzzles from an I.Q. test and I realized then that I could definitely make good use of an immersion blender. Luckily, I got one for Christmas and I knew right away I wanted to attempt another soup.

Breaded & Baked Artichoke Hearts

Full disclosure: I LOVE fried foods. Yes, I try to eat healthy as much as possible, but every once in awhile I need something fried. It’s the ultimate guilty pleasure. I know it’s not good for me, but it’s ok to be naughty every once in awhile, right? Moderation and all that jazz. Ever since munching on the fried artichokes at Golden Road, I’ve been craving them, but thought the Week of Appetizers would be the perfect opportunity to try my hands at a healthier version.

Curried Lentils Over Jasmine Rice

I’ve decided to keep up with my current curry kick and bring you another recipe featuring my favorite spice. This time I’m going for curried lentils. I found this recipe on Wikihow and based my recipe off of it, only tweaking it slightly. I fell in love with lentils about 4 years ago when my stepmother Maria made a huge pot of lentil soup for Christmas. That soup is still one of the best I’ve had, ever. Now I’m sure I had lentils before that point, but they obviously didn’t make a huge impact on me because I can’t remember them before that moment.

Vegetable Curry Fried Rice

Two of my favorite dishes when dining at Asian restaurants are fried rice and yellow curry. 99.9% of the time I will order either one of those, rarely straying from the norm. I’m ok with that. I love them both so why risk ordering something I may not like when I can be a happy little camper chewing through a smile on my tried and true favorites?

Tofu Coconut Curry Polenta Pizza

A couple weeks ago we were invited to a friend’s housewarming party and he ordered a Thai Tofu Curry Pizza and it was AMAZING. Cheese-less, simple and spicy with perfectly cooked tofu (a little crisp on the outside, soft on the inside). I couldn’t stop thinking about it and even though it was not gluten-free I figured I could try to make my own version that was.

Kelp Noodles with Cilantro Pesto

I fell in love with kelp noodles a couple months ago after trying them for the first time at a raw restaurant in Santa Monica called M.A.K.E. I thought it sounded weird, but was feeling adventurous that particular weekend so I ordered it. Love at first bite for sure. I can’t remember exactly what they did to theirs, but it was heavenly. I knew I had to try making my own versions at home.

Beyond Meat Tacos with Peach Avocado Salsa

One uninspired evening I casually wandered into the grocery store down the street; with no plan in mind I found myself in front of the vegan foods section staring at a package of Beyond Meat. I’d been hearing all the buzz around this miracle meat alternative for awhile now and was super curious to try it out.

Grilled Pineapple Kale Salad

Some nights are just too hot to fire up the oven and eat an entirely cooked meal. We’ve had a few of those in Los Angeles the past couple weeks and this particular evening I wanted to put together a salad for dinner that would be bursting with flavor and leave me satisfied. The combination of hearty kale, crunchy cashews and the sweetness of the pineapple was a perfect blend that danced on my tastebuds.
