Here is my second Vegan MoFo post for this year!! Woo hoo! This dish came together randomly. I had a bunch of veggies left over from another meal and so I threw it all into a skillet together and miraculously it was pretty damn good!

1/2 Large Eggplant: $.60
1 bag Spring Mix: $1.99
1/2 Large Tomato: $. 60
1/4 Onion: $.26
1 cup Brown Rice: $.10
1 TBSP Olive Oil: $.12
1 TBSP Tamari Sauce: $.20**
Salt & Pepper: $.06
Total: $3.93 or $1.97 per serving (it makes two decent sized portions).
This has become one of my favorite meals. It’s so flavorful and easy to prepare and the rice makes it very filling.
**If you’re trying to cut back on sodium or soy, coconut aminos would work great here as well!
