Gluten-Free Mac & Shews

I hesitate to call this a vegan mac and cheese recipe because although this sauce came out tasting amazing, it’s just not very cheesy. Paired with a kale salad Mac and Shews is a satisfying and delicious dinner.


Gluten-Free Mac & Shews

    Quinoa pasta with cashew cheese sauce.



    1. Cook pasta according to package directions.
    2. Combine cashews, milk, mustard, nutritional yeast, garlic and lemon juice in a food processor and blend until smooth.
    3. Drain pasta and return to pot, stir in sauce and heat over low heat. Season with black pepper and crushed red pepper.

      That does sound yummy…and easy! ALWAYS a plus! I’m proud of your growing creativity in the vegan cooking adventure….nice having a husband that’s vegan too, so you don’t have to cook two separate meals every night :-).
