Southern Fried Tofu

My mama is from Texas. If you listen closely you can still hear the twang when she says things like “oven” and “lawyer”. We like to tease her about it. Her mother, my grandma, was a round, squishy woman with a bad ass attitude who smelled of cigarette smoke and Juicy Fruit gum, but man she could cook up a storm. Growing up I remember her making huge meals filled with butter, lard and fried…everything.

I’ve made baked falafel in the past from a mix, but this time I decided to be all domestic and do it from scratch. That way I would have complete control as to what went in it, and I could keep it cheap & gluten-free!

Grilled Pineapple Kale Salad

Some nights are just too hot to fire up the oven and eat an entirely cooked meal. We’ve had a few of those in Los Angeles the past couple weeks and this particular evening I wanted to put together a salad for dinner that would be bursting with flavor and leave me satisfied. The combination of hearty kale, crunchy cashews and the sweetness of the pineapple was a perfect blend that danced on my tastebuds.
