BBQ Meatball Sliders with Cucumber Radish Slaw

This coming Sunday is a big deal in America (to some). It’s the day when some sportsball team plays another sportsball team in a battle to the death! Ok, maybe there is no literal killing involved but it’s supposedly a showdown of epic proportions that only men wearing tight pants and huge fake shoulders could pull off.

Black Eyed Pea Hummus

Hummus has become my go-to food when vegan options are few and far between. Even in the middle of nowhere you can usually find hummus in the grocery store or at a Mediterranean restaurant. For day 3 of the Week of Appetizers I’m bringing you a recipe for a non-traditional hummus using black eyed peas instead of chickpeas.

Potato Zucchini Corn Fritters

My first attempt at making fritters! I admit, I was calling these fritters in my head the entire time I was making them with no actual idea what a fritter was, technically. It just felt right. I love them both so why risk ordering something I may not like when I can be a happy little camper chewing through a smile on my tried and true favorites?

Gluten-Free Baked Falafel Wraps

I’ve been craving falafel something fierce lately but I really didn’t want to be consuming anything deep fried (I’m trying to watch my figure y’all!). I’ve made baked falafel in the past from a mix, but this time I decided to be all domestic and do it from scratch. That way I would have complete control as to what went in it, and I could keep it cheap & gluten-free!

Tofu Coconut Curry Polenta Pizza

A couple weeks ago we were invited to a friend’s housewarming party and he ordered a Thai Tofu Curry Pizza and it was AMAZING. Cheese-less, simple and spicy with perfectly cooked tofu (a little crisp on the outside, soft on the inside). I couldn’t stop thinking about it and even though it was not gluten-free I figured I could try to make my own version that was.

Beyond Meat Tacos with Peach Avocado Salsa

One uninspired evening I casually wandered into the grocery store down the street; with no plan in mind I found myself in front of the vegan foods section staring at a package of Beyond Meat. I’d been hearing all the buzz around this miracle meat alternative for awhile now and was super curious to try it out.
