Vegetable Curry Fried Rice

Two of my favorite dishes when dining at Asian restaurants are fried rice and yellow curry. 99.9% of the time I will order either one of those, rarely straying from the norm. I’m ok with that. I love them both so why risk ordering something I may not like when I can be a happy little camper chewing through a smile on my tried and true favorites?

Soyrizo Kelp Noodle Casserole

The word “casserole” always made me cringe as a child. It brought to mind some gooey creamy concoction filled with canned tuna, soggy noodles and peas. Actually, it still makes me cringe a little, but I know now that casserole can mean many a different thing. Basically throwing a bunch of stuff into a dish and baking it – and voila – a casserole is born.

Gluten-Free Baked Falafel Wraps

I’ve been craving falafel something fierce lately but I really didn’t want to be consuming anything deep fried (I’m trying to watch my figure y’all!). I’ve made baked falafel in the past from a mix, but this time I decided to be all domestic and do it from scratch. That way I would have complete control as to what went in it, and I could keep it cheap & gluten-free!

Tofu Coconut Curry Polenta Pizza

A couple weeks ago we were invited to a friend’s housewarming party and he ordered a Thai Tofu Curry Pizza and it was AMAZING. Cheese-less, simple and spicy with perfectly cooked tofu (a little crisp on the outside, soft on the inside). I couldn’t stop thinking about it and even though it was not gluten-free I figured I could try to make my own version that was.

Spaghetti Squash & Kale Sauté

I’m not used to cooking for more than two people, but this past weekend I was at my mom’s place and found myself making dinner for five. Given that I was the only vegan, I wanted to make it tasty but still keep it in my cheap, gluten-free MoFo theme. Everyone loves quinoa and kale, right? Right. So I went with that…threw in a little extra stuff here and there and voila! Family meal.

Kelp Noodles with Cilantro Pesto

I fell in love with kelp noodles a couple months ago after trying them for the first time at a raw restaurant in Santa Monica called M.A.K.E. I thought it sounded weird, but was feeling adventurous that particular weekend so I ordered it. Love at first bite for sure. I can’t remember exactly what they did to theirs, but it was heavenly. I knew I had to try making my own versions at home.

Kale Chickpea Tomato Hash

Happy First Day of Vegan MoFo 2013 y’all!! This is my second year participating and I was stupid ambitious enough to pick a theme this time around. All of my Vegan MoFo posts will be gluten-free and cheap! I always hear from non-vegans that one of things holding them back from making the switch is that they think it’s super expensive to go vegan. Not true.

Tomato Cilantro Pasta

If you’re a regular follower of this blog you may have come to realize that I’m a huge fan of pasta as demonstrated here and here. I love making variations of these dishes because, let’s face it, they are easy, delicious and you can do so many different things with it and never get bored (maybe that’s just me?).

Mexican Stuffed Peppers

Recently my husband has been into cooking (hallelujah!). I guess all I had to do was go away for a week and let him fend for himself to spark the inspiration! The other night he even went grocery shopping on his way home from work and we came up with these spicy Mexican stuffed peppers. They came out pretty awesome.
