Apple & Sausage Stuffed Acorn Squash & VeeV Sage Cider

A couple months ago I was contacted by VeeV and asked if I wanted to make a dish to pair with one of their signature cocktails for an upcoming feature. Without hesitation I gave them an emphatic YES! I love VeeV. As you may remember, during the month of September I made weekly cocktails using this earth-friendly Açaí Spirit: my take on a mojito, pomegranate ginger concoction, citrusy basil spritzer and a warm apple cider. Needless to say I was stoked at the chance to work with VeeV!!

“Fat Ape” Mocha Banana Ice Cream

Last week was my first attempt at making banana “ice cream” – blending frozen bananas until they are creamy and smooth – and I was actually pretty shocked at how good it was! Upon first bite I was completely reminded of one of my favorite pre-vegan ice creams – Chunky Monkey and knew I could very easily and cheaply make my own version for Vegan MoFo.

Gluten Free Cinnamon Rolls with Coconut Glaze

It has been a long standing tradition in my family to have big ooey gooey cinnamon rolls every Christmas morning. It really is the only time of year I indulge in them, as much as I love ’em. After going vegan, and then gluten-free, it seemed like I would just have to sit back and watch everyone else partake in the festivities while I cried into a bowl of granola. But not anymore…
