Soyrizo Kelp Noodle Casserole

The word “casserole” always made me cringe as a child. It brought to mind some gooey creamy concoction filled with canned tuna, soggy noodles and peas. Actually, it still makes me cringe a little, but I know now that casserole can mean many a different thing. Basically throwing a bunch of stuff into a dish and baking it – and voila – a casserole is born.

Homemade Soyrizo Chili & Baked Potatoes

Chili is definitely a comfort food for me. The heartiness and spice really hit the spot and what I love best is that you can make chili from anything you have laying around really. Something about chili reminds me of being a little kid and my mom making her famous chili & corn chips dish. Nostalgic food is always a plus in my book.

Mexican Stuffed Peppers

Recently my husband has been into cooking (hallelujah!). I guess all I had to do was go away for a week and let him fend for himself to spark the inspiration! The other night he even went grocery shopping on his way home from work and we came up with these spicy Mexican stuffed peppers. They came out pretty awesome.
