Black Eyed Pea Hummus

Hummus has become my go-to food when vegan options are few and far between. Even in the middle of nowhere you can usually find hummus in the grocery store or at a Mediterranean restaurant. For day 3 of the Week of Appetizers I’m bringing you a recipe for a non-traditional hummus using black eyed peas instead of chickpeas.

Gluten-Free Apple Tartlets w/ Coconut Whipped Cream

It’s not quite Fall yet, and it doesn’t even feel remotely Fall-like in Southern California but I’ve been craving Fall flavors like crazy. It could be all the hubbub over the damn pumpkin flavored everything in stores and coffee shops (I have nothing against pumpkin, it just seems like overkill to me – much like shops putting up Christmas decorations before summer is even over). Anyhoo…back to Fall flavors.

“Fat Ape” Mocha Banana Ice Cream

Last week was my first attempt at making banana “ice cream” – blending frozen bananas until they are creamy and smooth – and I was actually pretty shocked at how good it was! Spaghetti Squash & Kale Sauté

I’m not used to cooking for more than two people, but this past weekend I was at my mom’s place and found myself making dinner for five. Kelp Noodles with Cilantro Pesto

I fell in love with kelp noodles a couple months ago after trying them for the first time at a raw restaurant in Santa Monica called M.A.K.E. I thought it sounded weird, but was feeling adventurous that particular weekend so I ordered it. Love at first bite for sure. I can’t remember exactly what they did to theirs, but it was heavenly. I knew I had to try making my own versions at home.

Chocolate Chip Cookie & Banana Ice Cream Sandwiches

Ok y’all – I had a rough week and usually when I’m having a bad time I turn to sweets. I figured this would be a great opportunity to channel my sweet craving into a Vegan MoFo theme post! What could I do on the cheap that was gluten-free and really hit the spot?

Kale Chickpea Tomato Hash

Happy First Day of Vegan MoFo 2013 y’all!! This is my second year participating and I was stupid ambitious enough to pick a theme this time around. All of my Vegan MoFo posts will be gluten-free and cheap! I always hear from non-vegans that one of things holding them back from making the switch is that they think it’s super expensive to go vegan. Not true.
