VeeV Spiked Apple Cider

It’s finally starting to feel like Fall here! The wind is blowing, the sky is clear and I’m ready for a warm Fall cocktail! A perfect combination is apple cider and VeeV Açaí Spirit. This is the last Friday of Vegan MoFo 2013 and I’m a little sad so I’m going to curl up with this warm cozy drink and reflect on the past month.

Potato Zucchini Corn Fritters

My first attempt at making fritters! I admit, I was calling these fritters in my head the entire time I was making them with no actual idea what a fritter was, technically. It just felt right. So before I posted this I Googled “fritter” and hot damn! I was right! It must be some inherent knowledge passed through my Southern blood line.

Orange Notella Mousse Tartlets

Oh how I’ve missed Nutella and it’s chocolatey hazelnutty goodness. Luckily Justin’s makes a vegan chocolate hazelnut butter that is just as good and I knew I had to make something with it. I’m calling it NOTella because it’s fun to change around food words when you make them vegan, whether it makes sense or not.

Portobello Walnut Tacos w/Cilantro Lime Rice

I do have a love affair with tacos. Something about spicy Mexican flavors like cumin, garlic and chili powder-enhanced filling wrapped up in a soft corn tortilla just makes me all warm and fuzzy inside. I am constantly trying to come up with new taco recipes to satisfy my inherent need for them and my…

VeeV Blood Orange, Raspberry & Basil Spritzer

Wow…another week has flown by and it’s time again to sit and ponder the past 7 days over a deliciously refreshing cocktail. This one may be a little dangerous because it doesn’t taste like alcohol at all, more like a yummy sparkling punch. Combining the flavors of raspberries, blood orange, basil and the Aćaí Spirit from VeeV this drink tantalizes your tastebuds.

Gluten-Free Apple Tartlets w/ Coconut Whipped Cream

It’s not quite Fall yet, and it doesn’t even feel remotely Fall-like in Southern California but I’ve been craving Fall flavors like crazy. It could be all the hubbub over the damn pumpkin flavored everything in stores and coffee shops (I have nothing against pumpkin, it just seems like overkill to me – much like shops putting up Christmas decorations before summer is even over). Anyhoo…back to Fall flavors.

Vegetable Curry Fried Rice

Two of my favorite dishes when dining at Asian restaurants are fried rice and yellow curry. 99.9% of the time I will order either one of those, rarely straying from the norm. I’m ok with that. I love them both so why risk ordering something I may not like when I can be a happy little camper chewing through a smile on my tried and true favorites?

Soyrizo Kelp Noodle Casserole

The word “casserole” always made me cringe as a child. It brought to mind some gooey creamy concoction filled with canned tuna, soggy noodles and peas. Actually, it still makes me cringe a little, but I know now that casserole can mean many a different thing. Basically throwing a bunch of stuff into a dish and baking it – and voila – a casserole is born.

Gluten-Free Baked Falafel Wraps

I’ve been craving falafel something fierce lately but I really didn’t want to be consuming anything deep fried (I’m trying to watch my figure y’all!). I’ve made baked falafel in the past from a mix, but this time I decided to be all domestic and do it from scratch. That way I would have complete control as to what went in it, and I could keep it cheap & gluten-free!
