VeeV Pomegranate Ginger Cocktail

Hey, hey, hey it’s Friday night and that means it’s my favorite time – cocktail time (there’s  good chance I’m a lush)! Last week I made some awesome cilantro mojitos using VeeV Açaí Spirit and they were yummmmmmmy! VeeV is my new best friend all time favorite spirit. It blends well with all kinds of mixers and the taste is so smooth. I’m having a blast coming up with concoctions for my Friday night Vegan MoFo feature. On to this week’s cocktail!!

I made another infused simple syrup for this drink – chopping up some fresh ginger and letting it sit in a jar with the syrup over night. This made an excellent flavor combination, the spice of the ginger and the sweetness of the sugar – delicious. Paired with organic pomegranate juice this was a fruity, luscious and refreshing beverage.

I was lucky enough to be able to share this libation with my mom and brother as we lounged by her pool and it was the perfect way to spend an evening. I hope y’all can mix some of these up yourselves and share a little downtime with your loved ones.

A healthy cocktail featuring a lovely mix of açaí, pomegranate & ginger.

Ingredients

Instructions

  1. Make your simple syrup the night before or the morning of. Boil water, then add sugar slowly until it melts completely. Remove from heat and stir in ginger. Store in an air tight container in the fridge.
  2. Fill a shaker with ice and combine VeeV, pomegranate juice, lime juice and 2 TBSP simple syrup. Shake a few good times until it's all mixy and cold.
  3. Pour into chilled martini glasses and garnish with lime slices.
