Today is Vegan Pizza Day and to celebrate I made a BBQ Chicken Pizza! When I lived in L.A. I used to order something similar from Fresh Brothers but since moving to San Diego I have not been able to get my fill of vegan pizza and I’ve been having some crazy cravings for it lately!
This recipe was super easy to throw together and I was so excited with how it turned out. It almost seemed too easy, if you know what I mean. Whenever things are that easy I’m skeptical of the outcome but this was pretty darn awesome and is going in my regular dinner rotation! Ok, so, I don’t really have a dinner rotation – but maybe I’ll start one with this pizza being first on the list!
You can of course complicate the preparation of this meal by making your dough from scratch, but y’all know me – I like easy and I’m going for the store bought version! Trader Joe’s happens to make a vegan garlic and herb dough (they have plain and whole wheat as well) which was a fantastic foundation for this pie.
I used Gardein’s Seven Grain chicken tenders, cooked them half way in the oven then chopped them into bite sized pieces. Jason rolled out the dough (and tossed it around in the air like a professional pizza dude, which was pretty frickin impressive considering he’s never done it before). I spread on the BBQ sauce then topped with Daiya mozzarella shreds, baby portabella mushrooms, red onions, and the chicken. Threw that all in the oven and cooked according to the directions on the dough package.
Once the pizza was done, I sprinkled some chopped scallions on top and we were ready to eat! I made this meal even more epic by dipping my slices into some Follow Your Heart blue cheese dressing. SO GOOD and most certainly curbed those nagging pizza cravings I’ve been having!!
